Blackwater Cultellus Syrah
For this bottling, grapes are sourced from a singularly amazing block of vineyards against a steep Schist-covered slope in Riebeek Kasteel area. Winemaking is completely hands off. The juice spends 4 weeks on the skins, then drained & pressed to 8 year old 600 L barrels. The wine is left to rest and remains unmoved for 25 months. It is then bottled unfiltered & un-fined. In the glass, the wine is filled with notes of stewed cherry, scorched earth, blackberry, and tar on the nose. The palate will uncover hints of black pepper and sweet spice notes, with delicate acidity and soft, dry tannins on the finish.
