Made from 2 vineyards in the Franschhoek valley. The Chardonnay and Pinot Noir grapes are harvested on the same day and chilled overnight. All our fruit is handpicked in the early morning and handled reductively to preserve the integrity of the fruit.
A light whole bunch pressing according to the traditional champagne method is followed by 2 days of cold settling to clarify the juice. Fermentation lasts for 14 days. 12 Months of full lees contact is allowed post fermentation to add richness and texture to the wine. After the basewine is stabilized and bottled for second fermentation. This wine spent 16 months in bottle before disgorging.
A classic blend of Chardonnay contributing fruit and elegance and Pinot Noir for complexity and length of flavour. Light yeasty aromas and tones of citrus, fresh picked red apples with a rich creamy complexity and cherries on the palate. The exceptionally fine mousse contributes freshness and finesse.
Using two classic Provençal rosé grape varieties, Mourvèdre and Cinsault sourced from mature Darling bush-vines, lends the 2017 Marvelous Pink a definite sense of gravitas. Both components were fermented in neutral 500L barrels, the perfect vessels for enhancing the complexity of the wine whilst respecting varietal character. On the eye, Marvelous Rosé has a subtle burnished copper appearance. Aromas of rock-melon and nectarine are balanced by a delicate saline note, keeping the nose fresh and vibrant. The palate also, is a balancing act between primary flavours of nectarines and fresh raspberries and more complex leesy characters which provide the wine with savoury texture and delicious length. It will certainly develop beautifully for a further 5 years from the date of vintage.
