Hand-picked in the cool of the morning, the grapes undergo gentle pressing and cold settling before natural fermentation in 228 and 300 litre French oak barrels. A combination of new and older barrels are used to express the cultivar. The wine then undergoes lees contact for 10 months, with all batches and barrel treatments kept separately for selection purposes. This Chardonnay is a true masterpiece of winemaking, perfectly balancing fruit and wood flavors with a crisp acidity.
